In this experiment, extract from annatto seeds is microencapsulated in poly(3-hydroxybutyrate-co-3-hydroxyvalerate) by the emulsionsolvent evaporation method. Encapsulation delays degradation and promotes the sustained release of bixin, an extract useful in the cosmetic and food industries.

Mosher Amides: Determining the Absolute Stereochemistry of Optically-Active Amines  Damian A. Allen, Anthony E. Tomaso, Jr., Owen P. Priest, David F. Hindson, and Jamie L. Hurlburt
In this experiment, teams of students are given an optically-pure amine of known structure but unknown stereochemistry. Different teams derivatize samples of the amine with (R) and (S) conformations of Mosher's acid chloride. The resulting diastereomers are analyzed by NMR to determine the absolute configuration of the initial, unknown amine.

Converting Municipal Waste into Automobile Fuel: Ethanol from Newspaper  Mark Mascal and Richard Scown
In this experiment, waste newspaper is pulped with acid and its cellulose hydrolyzed to produce glucose syrup that is fermented and distilled to yield ethanol. In doing so, students are introduced to carbohydrate chemistry and the use of fermentation in organic synthesis.

A Simplified Model To Predict the Effect of Increasing Atmospheric CO2 on Carbonate Chemistry in the Ocean  Brian J. Bozlee, Maria Janebo, and Ginger Jahn
The chemistry of dissolved inorganic carbon in seawater is reviewed and used to predict the potential effect of rising levels of carbon dioxide in the atmosphere. It is found that calcium carbonate may become unsaturated in cold surface seawater by the year 2100, resulting in the destruction of calcifying organisms such as coral.

The Chemistry of Paper Preservation  Henry A. Carter
This article examines the applications of chemistry to paper preservation. The acid-catalyzed hydrolysis of cellulose accounts for the deterioration of paper in library books and other written records. To combat this threat to our written heritage, new permanent papers have been developed that are relatively chemically stable and undergo a very slow rate of deterioration.

Using "Basic Principles" To Understand Complex Science: Nicotine Smoke Chemistry and Literature Analogies  Jeffrey I. Seeman
The HendersonHasselbalch equation calculates the equilibrium distribution of 50:50 for nicotine in its nonprotonated (free base form), relative to its monoprotonated form, at pH of 8 in dilute aqueous solution. This ratio has then been used in the literature to predict the effect of ammonia compounds in tobacco and in smoke on nicotine pyrolysis and smoke chemistry. Experiments demonstrate that neither the thermal chemistry of tobacco alkaloids nor the transfer of nicotine from tobacco to smoke can be explained by the position of the nonprotonated versus monoprotonated form equilibrium in aqueous extracts of tobacco. The high thermal stability of nicotine in air allows nicotine salts to be converted to nonprotonated nicotine and volatilize during heating prior to any substantial decomposition of the nicotine moiety. In contrast, cocaine hydrochloride is thermally unstable and will rapidly decompose upon heating; cocaine hydrochloride must first be converted to its nonprotonated form prior to heating and volatilization.

First-year and organic chemistry students will learn the chemistry of soap by making some of the eleven described formulations, which produce usable, quality bars of soap. Opaque and transparent soaps are made in two and three hours, respectively. With an introduction to formulation chemistry, organic chemistry students can devise a formulation to synthesize their own opaque soap. Many of the formulations use commonly-available fats and oils, while some formulations incorporate specialty fats and oils for therapeutic purposes, for example, to relieve dry skin or itching.

Demonstrating Encapsulation and Release: A New Take on Alginate Complexation and the Nylon Rope Trick  Andrienne C. Friedli and Inge R. Schlager
Three variations on a classroom demonstration of the encapsulation of droplets and evidence for release of the interior solution are described. The first two demonstrations mimic biocompatible applications of encapsulation. A third encapsulation exercise exploits the irreversible interfacial polymerization of diamine and diacid chloride to form membranes and illustrates the detection of diamine release from the capsule using an indicator.

Graded classroom discussions are a technique employed to extend students' classroom knowledge into real life. Students read a set of articles about a topic relating to the curriculum. The teacher poses an open-ended question to which the students propose answers based on the articles they read. Simultaneously, the responses are graded by the teacher, who does not participate in the discussion.

An Unexpected Event When Chymotrypsin Performs Its Physiological Role  Ivan G. Darvey
One of the events that occur during the chymotrypsin-catalyzed hydrolysis of proteins is an example of an exception to a rule of thumb taught in introductory organic chemistry courses, namely, that amides can't readily be converted to esters. If biochemistry teachers and the authors of textbooks of biochemistry commented on this unusual reaction, it would emphasize further the remarkable part chymotrypsin plays as a catalyst in carrying out its main perceived "physiological role".

The chemistry of the loss of carbonation from carbonated beverages on storage is considered. Increasing the pressure of CO2(g) will restore carbonation, but an increase in pressure adding air should not affect the equilibria. It can and does, however, affect the kinetics-the rate at which a new equilibrium is established. Thus the Fizz Keeper is effective for storage of resealed pop containers for hours, but not for periods of weeks or months.

A Simple Method To Demonstrate the Enzymatic Production of Hydrogen from Sugar  Natalie Hershlag, Ian Hurley, and Jonathan Woodward
In the experimental protocol described here, it has been demonstrated that the common sugar glucose can be used to produce hydrogen using two enzymes, glucose dehydrogenase and hydrogenase. No sophisticated or expensive hydrogen detection equipment is required-only a redox dye, benzyl viologen, which turns purple when it is reduced. The color can be detected by a simple colorimeter.

A simple and effective method to demonstrate the phenomenon of photocatalytic degradation of a gaseous organic pollutant was developed. Titanium dioxide (anatase) was used as the photocatalyst, and sunlight was found to be an effective light source for the activation of TiO2. The organic pollutant degrade in this demonstration was a common indoor air pollutant, dichloromethane.

The process of corrosion can be demonstrated in a slide projector, since the cell is in the shape of a slide, or on the stage of an overhead projector by setting up a simple galvanic cell. The potential of commercially available steel pellets coated with polyethylene (PE) or poly(vinylchloride) (PVC) to remediate an oil spill is demonstrated. Polymer-coated particles are weighed, immersed in oil, magnetically harvested and the remaining oil is weighed in order to enable students to quantitatively investigate the adsorption process. The possibility of recycling the beads and reclaiming the oil is also demonstrated.
